Next level fennel gratin. Which makes it a serious main course. Not just a simple vegetable dish, no one that stands. Stands out. Herbs, (vegan) cheesy, handsome and with a deep taste.

Ingredients

  • 4 bulbs fennel

  • 4 shallots

  • 4 cloves garlic

  • 60 gram flour

  • 60 gram vegan parmesan cheese

  • 60 gram plant based butter

  • 1 bouquet flat parsley

  • 10 sprigs fresh thyme

  • 150 ml vegan cream

  • olive oil

  • salt and pepper

Preparation

  • Cut the fennel into strips and cook for 3 minutes. Drain them and let them steam off well.
    Finely chop the shallots together with the garlic. Put them in an oven dish. Add the fennel, pour about 50 ml olive oil over it and pepper and salt. Mix everything together well. Add about ten sprigs of fresh thyme that you tie together with a cooking string. Pour in the cream.
    Preheat the oven to 200 degrees.
  • In a bowl, combine the flour, butter, parmesan cheese and finely chopped parsley. Work it together with your hands. Then divide it over the fennel.
    Then the dish can be put in the oven, 45 minutes until the top is nicely au gratin.
