Bread, it’s not my favourite. I prefer having a warm lunch. Even salad are lukewarm often at my table. But if I make this little mushroom dish for lunch, than even I have some bread to go along with it. It’s a smasher. Irresistible and greedy, that’s what it does to you. But hey, there are worse things we need to deal with.

Ingredients

  • 750 grams mushrooms

  • 100 ml white wine

  • 1 red chili pepper

  • some vegan chicken broth

  • 2 onions

  • nice bread

  • 3 cloves garlic

  • olive oil

  • salt and pepper

Directions

  • Cut the onions into pieces, not too small. Cut the garlic into slices. Do the same with the mushrooms. I always take off the stems, but if they are fresh enough you can keep them. Cut the red chili pepper into slices. Take out the seeds if you do not want your dish to get too spicy.
  • Preheat a frying pan. Pour in the olive oil and let the onions turn brown and golden. Add the garlic. And then the mushrooms. Turn up the heat and make sure the mushrooms lose all their fluids. Really all of it. When that’s the case, add the wine. And let this cook well for approximately 10 minutes. And then, only when the wine is almost gone, add the broth. And with the broth it’s the same procedure. Let it cook until almost gone. Then add the chili pepper.
  • Bring to taste with salt and pepper. And then, just enjoy. And then, maybe a short siësta?
