Sweet potato pear soup

minutesI used to make sweet potato pear salad… and suddenly thought … That could also be a great soup. But it shouldn’t stay and be too sweet either. And so I added some fenugreek. And that was a great find, if I do say so myself. And then add a few caramelized walnuts and it was complete.
Ingredients
3 Onions
5 cloves garlic
1 kilo sweet potato
1 kilo pear
1 table spoon fenugreek
4 vegetable broth
24 Walnuts
50 ml agave syrup
0,5 table spoon pul biber
salt and white pepper
olive oil
Cooking time
- Roughly chop the onions and fry them gently in the olive oil in the soup pot. Add the garlic cloves.
Peel the sweet potatoes and cut them into pieces.
Peel the pears and remove the cores and cut them into pieces as well. - Add the sweet potato to the onions.
Pour in enough water so that the potatoes are 4 centimeters under water.
Add the vegetable stock tablets and stir well. - When the potatoes are cooked, add the pears and the fenugreek.
Stir well.
Bring it to taste with salt and pepper. - Meanwhile, toast the walnuts in a dry frying pan, add the pul biber and finally the agave syrup.
- Puree the soup with the immersion blender. Add a little more liquid if you find the soup too thick. Season with salt and pepper to your own taste.
