Zucchini in delicious tomato-date sauce

Delicious surprising way of preparing zucchini. The zucchini absorbs all the flavors wonderfully and turns into a really interesting and flavorful dish. Delicious with bulgur, rice, potato.

Ingredients

  • 4 zucchini

  • 2 Onions

  • 5 cloves garlic

  • 1 can peeled tomatoes

  • 15 dates (pitted)

  • 0,5-1 table spoon harissa

  • olive oil

  • salt and pepper

Cooking time

  • Cut the onions into not too small pieces, say 1×1 cm. Fry them in olive oil. Add the finely chopped garlic and let it fry until they no longer have anything raw.
    Then add the zucchini that you have coarsely chopped. Turn up the heat slightly and stir well each time.
  • Grind the peeled tomatoes with a hand blender or in a food processor and then add to the zucchini. Put the lid almost completely on the pan and let it simmer nicely.
  • Cut the dates into rings and add to the sauce after half an hour. Just like the harissa and the salt and the pepe. When the sauce has reduced well, it is ready to serve.
