minutesOnions at their very best. Well, I think onions are great gifts from nature anyway. Every dish will be tastier. But on their own, they’re also great. They really don’t necessarily need another environment to come into their own. Certainly not in this dish. We served it here as a starter, appetizer. But I can imagine that this is also delicious with a meal of green beans, for example.
Ingredients
6 white onions
100 ml extra virgin olive oil
half cup miso (about 80 grams)
5 table spoon cane sugar
50 ml rice vinegar
salt and pepper
Cooking time
- Don’t chop the onions too finely. Fry them gently in the olive oil for up to 15 minutes. They should be lightly browned and soft through and through.
- Then add the sugar and check carefully if it melts.
- Add the miso and the rice vinegar and stir it in very well.
- Let everything simmer gently for another 10 minutes, season with salt and pepper. We served it with Lebanese flatbread smeared with olive oil and za’atar.
Notes
- Inspired by recipe by Ottolenghi.
