Chicory salad

minutesI love bitter products and same goes for chicory. Especially when I combine it with sweet tastes, then it turns into something extremely delicious. In this salad the secret ingredient is caramelised hazelnut (and onion). And the grapes are the finishing touch.
Ingredients
5 stalks chicory
500 gram white grapes
100 gram hazel nuts
3 red onions
100 ml balsamic vinegar
olive oil
salt and pepper
preparation
- Preheat a frying pan and pour in a splash of olive oil. When warm, put in the red onion cut in slices. Fry it for about 5 minutes. Then add the hazel nuts and salt and pepper. Pour the balsamic vinegar and let it simmer for 10-20 minutes until it becomes a sweet and syrupy sauce.
- In the meantime cut the chicory in slices and the grapes in halves.
- When the onions are caramelised mix this through the salad.
