Spicy potato cookies

minutesThese potato cookies look so deliciously friendly. But make no mistake, the inside is anything but friendly. At least, it’s nice and spicy. Surprising if you don’t expect it to be hot and spicy. A delicious different way of preparing potatoes.
Ingredients
1 kilo potatoes
0,5 table spoon turmeric
1 table spoon mustard powder
1 bouquet fresh coriander
10 sprigs mint (leaves)
2 green chili peppers
2 table spoons tamarinde paste
2 cloves garlic
0,5 table spoon sugar
1 lemon
250 ml sunflower oil
Preparation
- Boil the potatoes for 15 minutes. Drain and add the turmeric, mustard powder and salt. Mash everything into a puree.
- In a food processor, mix the mint leaves, cilantro, garlic, chilies, tamarind, sugar and salt. Mix it into a nice spicy puree.
- Shape the mashed potatoes into nice balls. Press a hole in it with your index finger and scoop a small spoonful of spicy puree into it. Close the hole again with mashed potatoes. Repeat this until the puree is finished. Then make flat cookies of 1-2 cm thick from the balls. Place them on a platter and let them rest in the fridge for half an hour.
- Heat a frying pan with a non-stick coating and pour in the sunflower oil. When it is hot, bake the potato cookies in about 7 minutes until golden brown and crispy on the outside.
If they don’t get crispy enough in the pan, put them in a platter and place them under a hot grill in the oven for another 5 minutes.
