Spiced celeriac from the oven

minutesI’ve been very successful with this recipe this summer. Celeriac. People are shy. Look at it. Yeah, looks nice but… Yeah, celeriac …. Do I dare or not? And if, after some encouragement, they do take a bite, and then it all takes off. There is no stopping it. Do I need to say more? No, thought so.
Ingredients
1 celeriac
1 lemon
75 gram plant based butter
1 tea spoon smoked round paprika
1 tea spoon cinnamon
1 tea spoon coriander seed
salt and pepper
Preparation
- Preheat the oven to 190 degrees. Peel the celeriac. Wash him well. Cut it into pieces of 2 by 2 cm. Heat the butter in a frying pan and fry the celeriac pieces alternately until nicely browned. In about 10 minutes.
- Remove the pieces from the pan and place them on a baking tray. Next to each other. Mix the spices (bruise the coriander seeds in a mortar first) in a bowl and sprinkle the celeriac pieces with it. Cut the lemon into quarters and place the wedges between the celeriac.
- Place the baking tray in the oven for about 20 minutes. Turn the celeriac occasionally. Serve the lemons. Before serving, squeeze the juice over the celeriac cubes.
