Bean tomato salad in tahini dressing

I really like a bean salad. It’s so soft and with some fresh tomato and a nutty tahini dressing it all comes together wonderfully. At the table in the restaurant, the salad also received high praise and pleasantly surprised our guests, who apparently had some mixed feelings about the word ‘bean salad’. 😉

Ingredients

  • 750 gram canned beans: kidney beans, borlotti beans, flageolets, lentils and the like

  • 1 red onion

  • 4 ripe tomatoes

  • 50 ml tahina

  • 50 ml water

  • 1 lemon for its juice

  • salt and black pepper

Cooking time

  • Drain all the beans and also rinse them under the tap.
    Chop the red onion.
    Cut the tomatoes into cubes.
    Mix everything together well.
  • Mix the tahina, water, lemon juice well together. Add a little more water or lemon juice if you find the dressing too thick.
  • Mix the dressing with the salad and serve with a little flat parsley.
