Salad with unforgettable dressing of sun-dried tomatoes

You can simply make the green salad with the green ingredients that you like best. Here I added some edamame beans and avocado. Plus fresh herbs such as flat-leaf parsley, mint, dill and coriander. But the dressing is the winner, so don’t let the salad compete with the dressing. The salad should provide the crunch, that’s the most important thing.

Ingredients

  • Different types of green lettuce

  • different types of fresh green herbs

  • 1 red onion

  • 3 spring onions

  • For the dressing
  • 1 small jar sun-dried tomatoes

  • 4 cloves garlic

  • 250 ml olive oil

  • 20 ml balsamic vinegar (to taste)

  • 2 table spoon Dry oregano

  • salt and pepper

preparation

  • Put the green ingredients in a bowl. Mix them together nicely. Divide the finely chopped red onion and spring onion nicely.
    Set aside some spring onion to drizzle on the dressing.
  • Place all the ingredients for the dressing in a food processor. Mix well. Taste carefully whether there needs to be a little more of one or the other. Be careful with the balsamic, which can quickly overpower.
