Ingredients
10 shallots
1/4 tea spoon fenugreek seed
2 tea spoon coriander seeds
1 tea spoon cumin seeds
10 cardamom pods
0,5 tea spoon turmeric/turmeric powder
1 chili
3 table spoon fine sugar
salt and pepper
200 ml olive oil
100 gram margarine
Cooking time
- Carefully open the cardamom pods and remove the seeds. Now put in a dry frying pan all the spices except the turmeric and fry them for a while until they start to smell. Now put everything in a spice grinder and also mix it together with the turmeric.
- Now heat the olive oil and butter in a frying pan and put the onions in it. Let them bake slowly and sweet, occasionally with the lid on. This can take about half an hour though. Add the finely chopped chili pepper and let it bake completely soft.
- Then add 2-3 teaspoons of your spice mix and mix everything well. Also add the sugar. Make sure the heat is well low. When everything is well absorbed and the taste is good (maybe you want to add some more of the spice mix?) remove the pan from the heat.
- You can serve it with some bread. The best are small pieces of pita bread that are softly fried in garlic oil.
