minutesMy mother and my former mother-in-law could make the most delicious asparagus soup, in my opinion. And I was trying to match that all these years. Without luck. It just did not have what it should have. Until now. All of a sudden. Totally unexpected. Carelessly almost. This soup does not resemble that of the mothers(-in-law), but it is incredibly tasty. Better? Yes, even better maybe. Party time.
Ingredients
500 gram white peeled asparagus
3 cloves garlic
50 ml sunflower oil
4 vegetable stock tablets vegetable broth
2 large Onions
300 ml oatmilk
1-2 table spoon allspice
0,5 table spoon nutmeg
1 table spoon white pepper
salt
opt. little corn starch
Cooking time
- Heat the oil in the pan and fry the onions until very soft. They can get a little brown for the taste.
Add the finely chopped garlic, the sliced asparagus and stir well. - Add 500 ml of water and the vegetable stock tablets and let it simmer for 15 minutes.
- Puree the soup with a stick blender.
- Now add the spices and salt. Bring to taste. A little more of one or a little less of the other, see what you like best.
- Now you can add the oatmilk. Stir it nicely and let it become creamy.
