In addition to a sweet dish, I like to put down a fresher dish. I love those complementary or sometimes even contrasting flavors. That’s how I came up with the idea of cooking rice in citrus juices. Of course, depending on what you want, you can make it from quite sweet to a bit more bitter or sour. It’s just what you want. In any case, it is really very different. And that’s always nice, such a surprise.

Ingredients

  • 1 kilo basmati rice

  • 500 ml citrus juice (think grapefruit, lime, blood orange, orange, lemon…)

  • 100 gram pine nuts

  • paar sprigs fresh mint

  • salt and pepper

Cooking time

  • Squeeze your citrus fruits so that you have 1/4-1/3 of the moisture needed for your rice. Put this in your pan and top it up with water so that you have enough moisture. Bring it to a boil and cook the rice very gently. Add salt at last.
  • Meanwhile, toast the pine nuts until lightly browned and fragrant.
  • Serve your rice with the pine nuts and some finely chopped mint on top.
