Salad of grilled zucchini strings, lima beans, walnut and pomegranate molasses

minutesZucchini strings, so softly baked in the oven, so tasteful. They form the basis of this salad. Together with the lima beans, the spicy fried walnuts and the sweet-sour pomegranate molasses. Fatally tasty combination.
Ingredients
4 zucchini
2 red onions
250 gram lima beans
100 gram Walnuts
75 ml pomegranate melasses
olive oil
salt and pepper
pul biber
Cooking time
- Make thin strips of the zucchini with a vegetable peeler. Place them in a baking dish, pour over olive oil and salt and pepper. Place in a preheated oven at 190 degrees and let the zucchini bake for 40 minutes until fully cooked. Stir occasionally.
- Meanwhile, drain the lima beans and rinse them well.
- Fry the walnuts in a little pul biber/dried chili pepper.
- Cut the red onions into fine rings.
- Remove the zucchini from the oven and let it cool down a bit.
- Build the salad with lima beans at the bottom of your salad bowl, on top of that the zucchini, then the walnuts and then the red onion. Drizzle well with the pomegranate molasses. And pour over the olive oil you have left over from the baking dish. Season with salt and pepper if necessary.
