Spicy, slightly spicy bulgur snack as a starter

hourFancy a surprisingly tasty snack. That you haven’t eaten before? That everyone likes. That has a lot of different tasty layers? Well, you’re fine with this recipe.
Ingredients
200 gram red lentils
2 tea spoon sunflower oil
250 gram fine burgul
1 table spoon tomato puree
1 tea spoon round coriander and paprika
2 table spoon olive oil
2 spring onions
100 ml harissa
1 Lemon
fresh cilantro
250 ml plant based yogurt
2 limes
salt and pepper
Cooking time
- In a saucepan, bring the lentils to a boil in 600 ml of cold water, along with the sunflower oil and some salt. Cook them for about 20 minutes. Be careful not to cook dry.
- Meanwhile, mix the bulgur with the tomato paste, olive oil, onion, 2 tablespoons harissa (save the rest for garnish), the spices and salt and pepper. Then add the warm lentil mixture and knead well. Add another 100 ml of warm water and knead it very well again. Now put it away and let it work well together.
- In the yogurt, mix the finely chopped coriander and the squeezed lime.
- Now make oval balls from your bulgur mixture. Place them on a grease-free surface and let them rest for at least an hour. Then they become a bit firmer.
- Serve them on a bed of yogurt and with a scoop of (homemade) harissa on top.
