Warm spinach yogurt soup

minutesComfort food to the max. Creamy. Nutricious. Spicy enough but not too much. Enough bite. Yogurt at its best. Soup is a slighly different way. But in a way you ‘should’ have it more often. Because it is so good.
Ingredients
100 gram arborio rice
200 gram spinach
500 ml coconut yogurt
2 table spoon dried mint
1 table spoon dry chili flakes
salt and pepper
2 vegetable stock tablets vegetable broth
Cooking time
- Cook the rice in the broth, you need around 500 ml. Cook it till almost tender.
Then add another 250 ml and stir well.
Now add the spinach and stir again.
You can also add the yogurt.
Add half of the dried mint and bring to taste with salt and pepper. - In another pan, heat some olive oil and gently fry the dried pepper and the rest of the dried mint.
- Pour the soup into small bowls and top with a spoonful of your chili oil.
