Carrot in the oven with (vegan) honey

minutesThis is a wonderful side dish. Carrots are so versatile in the kitchen. There are so many ways to prepare it in a tasteful way. Also in this case. The carrot goes into the oven and is seasoned with cumin, honey, dill and nigella seeds. Beautiful taste, beautiful colour. Light and healthy. Simply wonderful.
Ingredients
1 kilo carrots
2 lemons (juice)
2 table spoons cumin seeds
1 bouquet dill
3 cloves garlic
3 table spoons vegan honey
olive oil
2 table spoons nigella seeds
salt and pepper
preparation
- Peel the carrots and slice them in nice long slices. Place them in a platter. Bring on a large splash of olive oil. Add the cumin seed and the salt and pepper. Don’t be too shy applying this.
- Place the platter in a preheated oven of 200 degrees. Bake the carrot for half an hour.
- In the meantime mix the lemon juice with the vegan honey. Pour this on the carrots, mix it well and place the platter back for another 10 minutes in the oven.
- Take the platter out of the oven. Cut the dill and sprinkle it over the carrots, just like the nigella seeds. Serve nice and warm.
