Cauliflower from the oven with green olives and large yellow raisins

hourIt is one of the simplest dishes and at the same time also the dish of which Joris declared: this is the tastiest dish of this year. Well, let 2025 start then, I say. I’m done.
Ingredients
1 Cauliflower
150 gram green olives
1-2 big onions
100 gram large yellow raisins (your Moroccan or Turkish grocer does have those)
saffron threads
olive oil
salt and pepper
Cooking time
- Break off the florets from the cauliflower and place them in a bowl.
Soak the 3-4 saffron threads in 80 ml of water. - Cut the onions into rings. And soak the raisins in a bowl of water.
- Add the saffron water to the bowl along with some olive oil.
Mix the onions and olives into everything.
Season with salt and pepper and stir again.
Check carefully if there is enough olive oil in it.
Now pour everything into a baking dish. - Now let the cauliflower cook in the oven for 30 minutes at 180 degrees.
Stir every 10 minutes.
At 20 minutes you can add the drained raisins and then stir everything again.
You can serve it with tahina sauce (see elsewhere on the site for recipe). That’s very tasty, but not necessary.
