Bitter sweet salad

minutesI like bitter. Very much so. It can’t be bitter enough for me. Chicory. Grapefruit. Brussels sprouts. And when it is combined with sweet, then la Beems is a very happy trooper. Let’s see if you will be too….
Ingredients
3 pink grapefruits
2 table spoons sugar
1 table spoon dried chili flakes
50 ml olive oil
0,5 lemon (for its juice)
2 table spoons sumak
1 red onion
2 sprouts chicory
1 hand lamb’s lettuce
50 gram fresh basil
Preparation
- Peel 2 of the 3 grapefruits and make sure you remove the white flesh on the wedges. Cut each wedge in half. Squeeze the third grapefruit and collect the juice.
- Pour the juice into a saucepan and bring it to boil along with the sugar and chili flakes. Let it reduce to a few tablespoons of syrup in half an hour. Let it cool down.
- Now add the olive oil, sumac, lemon juice and some salt to the syrup and mix well.
- Mix the lamb’s lettuce, the finely chopped chicory, the basil leaves, the grapefruit and the finely chopped red onion all together well.
Pour the dressing over the salad and mix well.
