Foul m’dammes & white bean salad

minutesFava beans (brown broad beans) are refreshing in this dish and a great addition for a Lebanese mezze. You can either eat it warm or cold, I prefer it warm. If you do not serve it warm, then at least serve it a room temperature. If foul is not automatically included in a mezze, I ask for it. No foul, no that’s impossible.
White beans can be tasteful, they incorporate perfectly the tastes that surround them. This salad is nice for lunch, as a side dish or part of a mezze of course.
Ingredients
- For the foul
1 can fava beans
1-2 lemons
3 cloves garlic
3 spring onions
1 bouquet flat parsley
0,25 bouquet mint
salt and pepper
- White bean salad
1 red pepper
2 sticks celeriac
1 red onion
4 spring onions
1 can white beans
1 bouquet flat parsley
2 cloves garlic
1 table spoon tahina/ sesame paste
2 table spoons za’atar
1 tea spoon smoked paprika powder
0,5 tea spoon white pepper
1 lemon (juice)
salt and pepper
PREParation
- For the Foul: Mix all ingredients and warm it up in a little pan. Serve it in a bowl with some Arabic bread. It is a indispensable dish for a mezze.
- For the white bean salade: Cut the peppers in small dices. Cut the celeriac in small dices and the spring onions in slices. Cut the parsley and bring everything together in a salad bowl.
- Bring the lemon juice, the tahina, the garlic, za’atar, salt and peper in a blender. Pour it over the salad and let all the flavours work together for an hour. Outside the fridge. Cold salads do not taste nice, is what I think.
