Lima beans in spicy and fresh oil

minutesLima beans are the discovery of 2021 for me. So deliciously crunchy, so great at absorbing flavors without losing its authenticity. This is a great surprising dish with a fantastic layering of flavors. Delicious to dip with bread.
Ingredients
700 gram lima beans
1 table spoons chili flakes
2 Jalapeno peppers
10 cloves garlic
1 lime
1 lemon
0,5 table spoon coriander seeds
1 table spoon cumin seeds
400 ml olive oil
preparation
- Toast the cumin seeds and coriander seeds in a dry frying pan. Do this for a few minutes and then scoop it into an ovenproof dish.
Then put the oil in the pan, heat it and then fry the whole garlic cloves, the jalapeno peppers, the chili flakes. Peel the lime and lemon into thin strips. Fry these in the oil too. Bake it on a low flame for 15 minutes. - Squeeze the lemon and lime. Add the seeds to the oil and stir in. Then pour the juice of the lemon and lime into the pan and stir until it starts to bubble. Add some salt and pepper.
- Add the drained and rinsed lima beans and gently heat through. Transfer to a bowl and add all the oil. Let it come to room temperature.
