The apples fell from the trees at the neighbors in the backyard and ended up in my kitchen via a basket over the fence. And some time later they played the leading role in this delicious Moroccan apple date pie.

Ingredients

  • 1 juicy and delicious ripe orange

  • 400 gram self-raising flour

  • 200 gram cane sugar

  • 250 gram plant based butter

  • salt

  • saffron powder

  • 6 gold rennets (apples)

  • 0,5 table spoon cinnamon

  • 0,5 table spoon round cardamom

  • 2 table spoon dark caster sugar

  • 250 gram fresh dates

  • 75 gram slivered almonds

Preparation

  • Grate the zest of the orange and then squeeze out the juice. Mix the flour with the orange zest, cane sugar and butter in a bowl. Mix in a pinch of salt. Knead it into a ball, roll it in cling film and let it rest in the fridge for half an hour.
  • Add the saffron powder to the orange juice. Peel the apples and cut them into 1 cm cubes. Put them in a bowl and add the orange juice. Add the spices and the caster sugar. Pit the dates and cut them into small pieces as well.
  • Preheat the oven to 175 grams. Remove the dough from the refrigerator and roll it out into a sheet with a thickness of 0.5 centimeters. Line a baking tray with baking paper and place the dough on it. Spoon the apple on top and also divide the date pieces over it. Sprinkle the almond shavings on top and put the cake in the oven. Check after about 25 minutes if it is not going too fast. The almonds and dates tend to turn black. If this seems to be the case, put a sheet of aluminum foil on the cake.
