Spicy sweet bulgur with grilled green asparagus

Sweet and spicy at the same time, it’s a classic combination. A fatal attractive tasty combination. Because of the sweetness, the sharpness is actually even tastier, even more addictive. Dried figs, date syrup, cinnamon, cumin… together with the red peppers and the soothing effect of the bulgur are simply delicious. And i haven’t even mentioned the green asparagus that are lying there so beautifully on the bulgur. Eye-catching and together with the bulgur they are also mouth-watering.


  • 250 gram fine bulgur

  • 2 red onions

  • 5 spring onions

  • 500 gram green asparagus

  • 7 dry figs

  • 1 – 2 red hot chili peppers

  • 3 table spoons dade syrup

  • 1 table spoon cumin

  • 1 table spoon cinnamon

  • 0,5 table spoon saffron

  • olive oil

  • salt and pepper


  • Finely chop the red onions and spring onions. Fry these in the olive oil in a pan with a thick bottom. Add the red peppers there. Choose whether you want to remove the seeds or to use them depending on how sharp you want your dish.
    Then add the bulgur and pour in enough water that it just rises above the bulgur. Pour in the date syrup and the finely chopped dried figs. Stir well. Put the lid on the pan and reduce the heat. Stir everything again after 5 minutes. Check whether the bulgur is cooked and there is enough moisture in the pan.
  • After 10 minutes, season the dish with cumin, cinnamon, salt and pepper.
    Meanwhile heat a frying pan. Pour in some olive oil and fry the green asparagus over high heat. They are allowed to burn somewhat. Bake them alternately for 5 minutes.
  • Spoon the bulgur into a nice flat dish. Arrange the green asparagus nicely in a circle on top of the bulgur.
