Tomato mint salad

6 very ripe tomatoes
1 red onion
20 leaves fresh mint
1 lemon for the zest and the juice
really nice olive oil
salt and pepper
preparation
- Cut the tomatoes and the red onion into small/tiny pieces.
- Rinse the lemon and scrape off the zest.
- Cut mint leaves.
- Mix the olive oil, the lemon juice, the mint, the zest, salt and pepper together in a bowl. Mix it with the tomatoes and the onion.
- Serve in 1 person portions on a little plate. Add some nice bread to dip in the sauce.
