Arugula has a very distinct taste and this soup really comes into its own. Together with the other ingredients it forms a nice spicy soup.

Ingredients

  • 1 1 onion

  • 250 gram 250 arugula

  • 300 gram 300 spinach

  • 7 cloves 7 garlic

  • 0,25 table spoon 0,25 fresh nutmeg, allspice, turmeric

  • 0,25 table spoon 0,25 smoked paprika powder

  • 2 liter 2 vegetable broth

  • 1 bouquet 1 fresh cilantro

  • olive oil for frying

  • finest olive oil to garnish

Cooking time

  • Heat the olive oil in a soup pan and fry the onion and garlic cloves until soft. With the lid on the pan, for 5 minutes. Now add all the spices and stir well. Now add the arugula and spinach and stir well again. Pour in the broth and let everything cook well for 10 minutes on a low heat.
  • Puree the soup with a hand blender until smooth.
  • Pour the soup into bowls. Garnish with the coriander, smoked paprika and a drizzle of your best olive oil.
