Green beans ai ai ai so divinely delicious

You have to admit it green beans are just a really boring vegetable. Really boring. Overcooked before you know it. Not interesting at all. Unless, of course, you do something extraordinary with them and they become the center of your feast. The French often serve them with some butter and some crushed garlic. I do this all the time as well. This is a variation on that theme, but next level really.

Ingredients

  • 1 kilo green beans

  • 1 bulb garlic

  • 1 Lemon

  • 0,5 table spoon pul biber or dry chili peppers

  • 100 gram pine nuts

  • olive oil

  • salt and pepper

Cooking time

  • You start off by roasting the garlic. This will give your ‘oil’ a very soft and beautiful emulsion and taste. I roast garlic in all kinds of different ways, but in this case it is best to wrap the garlic bulb in aluminum foil and put it in an oven for an hour at about 180-200 degrees.
    Then remove the garlic bulb and squeeze the cloves from their ‘jackets’. You can do that one by one, or all at once.
  • Place the soft cloves in a mortar along with the grated zest of the lemon, lemon juice, chillies, pine nuts, olive oil (about 50-75 ml) and salt and pepper. Mix it all gently in a mortar and pestle until it becomes a nice emulsion.
  • Meanwhile, cook the green beans. Drain them and let them evaporate for a while so that they no longer release any moisture. Then put them in a bowl and pour your oil emulsion over it and toss well. Serve immediately on a nice plate.
