Green peas with a real wow effect

Green peas, they are not my favourite. To put it mildly. Don’t find them deep in my heart at all. Sorry. So then you will see how you can serve them with a real wow effect. And that has worked incredibly well here. I even like to eat peas.

Ingredients

  • 1 kilo peas

  • 500 small shalots

  • 12 cloves garlic

  • 250 gram shallots, finely chopped

  • 250 ml dry sherry

  • 250 ml plant based cream

  • 1-2 table spoon za’atar

  • 1 table spoon sumac

  • 100 ml white wine

  • salt and pepper

  • olive oil

Cooking time

  • Caramelized shallots
  • Cut the shallots in half, but leave them in their skins. Peel the garlic cloves. Place them all in a baking dish. Drizzle with olive oil. Sprinkle with the za’atar and sumac. Then pour in the white wine. Place in an oven at 200 degrees and let them caramelize and become buttery soft for 30-45 minutes.
  • Meanwhile, soften the finely chopped shallots in a pan. Then add the sherry and let it boil. Then add the cream and stir well. Bring it to taste with salt and pepper.
  • Boil the peas for a few minutes before serving.
  • When serving, scoop the cream into the bottom of a bowl. Scoop the peas on top of the cream and drape the caramelised shallots and garlic cloves around the peas.
