minutesTabbouleh has become a dish that many people have heard of. The classic variant can be found elsewhere on the website. This is a variation on it. With green olives, with avocado, with spring onion. Deliciously fresh. And that bulgur, of course, it brings everything back together wonderfully.
Ingredients
5 spring onion
2 cucumbers
2 bunch flat parsley
1 bouquet fresh mint
100 gram green olives
100 gram fine bulgur
2 avocado
2 lemons
1 head little gem
olive oil
salt and pepper
Cooking time
- Soak the bulgur in cold water. Just submerge it in water and let it stand for 10 minutes.
In the meantime, you can cut the spring onions into rings. The avocado into small cubes. Do not peel the cucumber, but do cut or scoop out the seeds. Then you can cut the cucumber into small pieces.
And finally, you can cut olives into rings.
Finely chop the parsley and mint leaves. - Make a dressing of the lemon juice and olive oil with salt and pepper.
Remove the leaves from the baby gem and place them in a circle in a (flat) dish.
Mix all the ingredients for the salad together.
Place the salad in the center of the bowl so that the lettuce leaves form a nice circle around it.
