Bulgur, oh well, it’s delicious with everything right? This is a lukewarm salad with a kick, with taste and with a delicious structure. Delicious bite and at the same time a comfort food feeling. Great for seasons when it’s not so hot but you still feel like a salad.

Ingredients

  • 2 Onions

  • 500 gram tomatoes

  • 1 can tomato puree

  • 500 gram bulgur (fine bulgur, even if you see the coarse one on the photo)

  • 2 table spoon pomegranate melasses

  • 4 green chili peppers

  • 4 spring onions

  • 4 cloves garlic

  • 1 table spoon cumin seeds

  • pomegranate

  • fresh mint, fresh cilantro

  • olive oil

  • 50 ml lemon juice

  • salt and pepper

Cooking time

  • Gently fry the chopped onions with the garlic in the olive oil. Add the diced tomatoes and let it simmer. Add the tomato puree, stir well and then add 200ml of water. Stir everything well and then add the bulgur. Stir well, turn off the heat and let the bulgur cook.
  • Now you can mix the other ingredients – the finely chopped spring onion and the pomegranate seeds too – through the bulgur salad. Season it well with salt and pepper.
  • Serve it on a bed of green lettuce.
