The fabulous turnip mash

Mash, a typical Dutch meal, I didn’t grow up with it. And I am usually not a big fan. But this mash is lovely. It’s a mash that has it all. An interesting variety of flavors, textures, and colors. Turnip, spinach, endive, dill, caramelized onions, some vegan cheese…. and delicious fresh yogurt… Well… That requires making and eating of course.

Ingredients

  • 500 gram potatoes

  • 750 gram turnip

  • 3 onions

  • 5 cloves garlic

  • 150 gram grated vegan cheese

  • 2 table spoons cumin seeds

  • 300 gram fresh spinach

  • 300 gram endives

  • olive oil

  • 200 ml plant based yogurt

  • 1 bouquet fresh dill

  • salt and pepper

Preparation

  • Boil the peeled potatoes and the peeled turnip together for about 15 minutes.
    Meanwhile, fry the onions well in the olive oil in a frying pan. When these are well browned and flavorful, remove them from the pan.
  • Now fry the spinach and the finely chopped endive in the same frying pan until all the moisture has disappeared. Then add the cumin seeds and stir well.
  • Crush the garlic cloves and stir them into the yogurt. Also add some salt. Finely chop the dill.
  • Mash the potatoes and turnip. Stir in the cheese well. Put it in a bowl. Now spoon the endive / spinach on top. And also scoop the onions on it. Pour the yogurt nicely around the edges. And then sprinkle the dill all over the dish.
