Tomato salad with slices of grilled lemon

Fried slices of lemon in the oven. In olive oil, with fresh sage. And then these are mixed with the other ingredients of the salad. If you don’t feel like making this salad right away… that would surprise me. As it could make you very curious to know how it combines with the tomatoes, the pomegranate seeds and molasses. The slightly sour lemon peels give a very different layer of flavour, simply delicious.

Ingredients

  • 1 red onion

  • 400 gram ripe small cherry tomatoes

  • 1 large lemon

  • half bouquet flat parsley, sage, mint

  • 2 table spoons pomegranate melasse

  • 1 table spoon piment

  • salt and pepper

  • 70 ml olive oil

  • 1 table spoon sugar

Preparation

  • Cut the lemon in half and then into thin slices.
    Preheat the oven to 200 degrees.
    Finely chop the sage leaves.
    Place the lemons next to each other in an ovenproof dish.
    Pour the olive oil with the sage leaves onto the lemons.
    Divide the sugar over the lemons.
  • Finely chop the red onion.
    Finely chop the parsley and mint leaves.
    Cut the tomatoes in half.
  • When the lemons have dried out after half an hour and the sage and olive oil have worked on them, you can remove them from the oven. Mix them with the rest of the ingredients.
  • Pour every drop of oil and juice over the salad. Every drop counts.
    Season it with salt and pepper.
