Breaded spicy whoppers of olives

minutesA spicy and tasty crust of pink berries, oregano, salt and pepper (and panko), great big pitted green olives and a quick deep fry. Simply delicious.
Ingredients
20 large pitted green olives
150 gram panko and breadcrumbs together
100 ml oatmilk
0,5 table spoon pink berries
0,5 table spoon oregano
100 gram flour
50 gram cornstarch
salt and pepper
250 ml sunflower oil
Cooking time
- Make a paste of the flour, cornflour and oat milk. It should not be too liquid and not too thick. Somewhere in between, like a thick yoghurt I would say.
Grind the panko a little finer in the food processor together with the pink berries. Then fold in the breadcrumbs. Bring it to taste with salt and pepper. - Heat the sunflower oil over high heat. Dry the olives one by one and turn them first in the paste and then in the panko mixture. then the breadcrumbs. Then place them in the oil and fry them until brown and crispy.
- Remove from the oil, drain on kitchen paper and serve quickly.
