Breaded spicy whoppers of olives

A spicy and tasty crust of pink berries, oregano, salt and pepper (and panko), great big pitted green olives and a quick deep fry. Simply delicious.

Ingredients

  • 20 20 large pitted green olives

  • 150 gram 150 panko and breadcrumbs together

  • 100 ml 100 oatmilk

  • 0,5 table spoon 0,5 pink berries

  • 0,5 table spoon 0,5 oregano

  • 100 gram 100 flour

  • 50 gram 50 cornstarch

  • salt and pepper

  • 250 ml 250 sunflower oil

Cooking time

  • Make a paste of the flour, cornflour and oat milk. It should not be too liquid and not too thick. Somewhere in between, like a thick yoghurt I would say.
    Grind the panko a little finer in the food processor together with the pink berries. Then fold in the breadcrumbs. Bring it to taste with salt and pepper.
  • Heat the sunflower oil over high heat. Dry the olives one by one and turn them first in the paste and then in the panko mixture. then the breadcrumbs. Then place them in the oil and fry them until brown and crispy.
  • Remove from the oil, drain on kitchen paper and serve quickly.
