The skin of a lemon, the zest, lifts a dish up in a tremendous way. In a savoury sauce, but also in sweet dishes. In a salad it gives it a ‘je ne sais quoi’. taste: something that makes a salad so special. This week I used it in a spicy harissa sauce that went along with green asparagus. Too good really.
You can use a special scraper to get off the zest in the best possible way.
