Batata in coriander seeds and red wine

Now this is a different way of having potatoes. Fried in olive oil with beaten up coriander seeds. Actually I beat up the potatoes too before they find their way into the pan. At the end they get a nice red wine shower. You are already on the verge of making it, right? Tonight, right? I knew it.

Ingredients

  • 1 kg somewhat smaller potatoes

  • 50 ml olive oil

  • 2 table spoons coriander seeds

  • 100 ml red wine

  • sea salt and pepper

preparation

  • Rinse the potatoes and hit them hard with something, like a rolling pin. Beware, raw potatoes are softer than you might think so don’t hit them too hard. The idea is that they open up a bit in order for them to suck in all the nice flavours in the pan.
  • Preheat a thick bottomed pan. Heat the olive oil. Grind the coriander seeds and add them to the oil in the pan. When they are all popped, add the potatoes. Sprinkle quite some sea salt over the potatoes.
  • Close the lid and let the potatoes bake and get done in half an hour. Now and then shake the pan fiercely.
  • After half an hour add the red wine. Let it all cook for a few minutes. Turn off the heat and let everything come together nicely.
