Ingredients
1 large broccoli
3 ripe tomatoes
1 red onion
1 red chili pepper
3 centimeter fresh ginger
4 table spoons sesame seeds
1 clove garlic
vegan mayonnaise
red wine vinegar
olive oil
salt and pepper
opt. hummus or pesto to add to your dressing
preparation
- Cook the broccoli for a few minutes, it should not become too soft. Cut the tomatoes in small pieces. Roast the sesame seeds in a dry frying pan. Beware that they do not burn. Cut the red onion and the chili pepper. Take out the seeds if you feel that would make your salad too spicy. Slice the ginger in small pieces as well or grate it if you prefer that.
- For the dressing you pour in the vinegar, the mayonnaise and the salt and pepper. You could also substitute the mayonnaise with pesto or hummus. Or combine them all.
- Serve the salad lukewarm.
