This is really a very creative way to serve Brussels sprouts. The combination of the sweet grapes, the delicious taste of sherry, the Brussels sprouts themselves and the crunchy water chestnuts. Cleaning Brussels sprouts is always a chore, but with a little help you’ll be done quite quickly. And otherwise it’s a meditative 15 minutes. And the result is not to be missed.

Ingredients

  • 800 gram cleaned Brussels sprouts

  • 2 shallots

  • 500 gram red grapes

  • 1 can water chestnuts

  • 7 cloves garlic

  • 4 bay leaves

  • 2 red hot chili peppers

  • 2 table spoons maple syrop

  • olive oil

  • salt and pepper

  • 150 ml dry sherry

Preparation

  • Fry the sprouts, together with the sliced shallots, in the olive oil for about 10 minutes. Until they are slightly baked and half done
    Meanwhile, heat the oven to 200 degrees.
    Mix the sherry, the finely chopped garlic, the chopped red pepper and the maple syrup together.
  • Now mix the sprouts, grapes, water chestnuts and sherry mixture together in an oven dish. Set the temperature to 220 degrees and let the vegetables bake for about 45 minutes. Stir everything together again every 15 minutes.
