Well, it will not get any more Lebanese than with this dish. Fattoush is a salad you will find everywhere in Lebanon or in a Lebanese restaurant. It is a fresh salad where you will find some very crispy Lebanese bread in it. The bread goes in the oven to get real crispy and then you break it in pieces on the salad. A real gem.


  • 2-3 Lebanese flat breads

  • 3 baby gems

  • 500 grams ripe tomatoes

  • 1 cucumber

  • 1 bunch radishes

  • 1 bunch spring onions

  • 3 table spoons sumac

  • 2 lemons

  • 6 table spoons olive oil

  • 1 bouquet fresh mint and flat parsley

  • 1 red and 1 yellow pepper

  • salt and pepper


  • Place the breads for 15 minutes in the oven and let become real crispy. There should not be left anything moist in the bread in order for them not to take in too much of the dressing of the salad later on and stay crispy for as long as possible. Cut the baby gems in slices. Cut the tomatoes and the cucumber in dices. Do the same with the peppers and the radishes. Cut the spring onions in slices.
  • Mix everything well and prepare the dressing of lemon juice, olive oil, sumac and salt and pepper.
    Cut the parsley and the mint and add to the salad.
  • Just prior before serving, as late as possible, break the bread and leave it on top of the salad. And then quickly start eating to enjoy the crispiness of the bread.
