Look, you want a snack. But you want something different. You want to make something so nice they’re almost going to fight about it. These fried courgette strips are your answer to THE snack. Of course, you can also make them as a side dish. Or put on a salad. Or… Anyway, go make them if you fancy a new addiction. Because that’s definitely what it’s going to lead to.

Ingredients

  • 2 large courgettes/zucchinis

  • 200 ml oat milk

  • 150 gram flour

  • 2 zakje baking poweder

  • 75 gram maizena/chick pea flour

  • 4 lemons

  • 400 ml sun flower oil

  • salt and pepper

Preparation

  • Cut the courgettes in three pieces. Then cut each part into eight strips from the top. You have 8 strips times 3 per zucchini. Cut the flesh off so that you only have the skin and a little part of the flesh for the strips. Now you have the solid parts left if all goes well.
  • Heat the sunflower oil in a deep frying pan.
    Mix the flour, baking powder, cornflour / chickpea flour and salt and pepper together in a bo
    Pour the oat milk into a bowl.
  • Now pass each zucchini stick through the milk and then through the flour mixture. And then fry them in the pan.
  • Serve with some lemon that you can squeeze over the zucchini.
