This salad is made of fresh herbs and arugula. You can combine them at your own taste. It also depends on what is in the house or in your garden or on your balcony. Sometimes I go wild and choose oregano. You can make this salad as extrovert or subtle as you like. It depends on what you feel like and what is to be found on the menu.

Ingredients

  • 250 gram arugula and/or spinach

  • bouquets fresh basil, chives, dill, parsley, tarragon, coriander, mint, oregano (to choose from)

  • 1 shallot

  • 3 spring onions

  • Dressing
  • 2 table spoons olive oil

  • 2 table spoons red wine vinegar

  • 1 clove garlic

  • 0,5 table spoon mustard

  • salt and pepper

preparation

  • Cut the leaves of the herbs.
    Mix the ingredients for the dressing
    Roast the pine nuts in a dry frying pan. When they start to smell they are done.
    Mix everything together and you’re all set.
