Kale with … spicy mushrooms

‘Stampot’ (mashed potatoes with kale) belongs to the Dutch ‘cuisine’. It’s part of our winter. And of course, stamport traditionally includes bacon and sausage. But not here, of course. And with these amazing spicy mushrooms, you have a whole new ‘stampot’ experience. One that overrides the other. It’s better. More tasteful. Really great.

Ingredients

  • 2 kilo potatoes

  • 1000 gram kale cut in pieces

  • 100 gram plantbased butter

  • 750 gram mushrooms

  • 1 red chili pepper

  • 3 cloves garlic

  • 1 large onion

  • 50 ml soy sauce

  • olive oil

  • salt and pepper

  • opt. some round curry

preparation

  • Peel the potatoes and cook them together with the kale in a large pan. About 20 minutes.
    Finely chop the onions, red pepper and garlic and slice the mushrooms. Heat a frying pan and add the olive oil and the plant based butter. Fry the onions, red pepper and garlic first. Then add the mushrooms and fry them nice and brown. Add salt and pepper and at the end deglaze it with the soy sauce. You can also add some curry powder if you want.
  • Drain the kale and potatoes. Mash them fine and add some olive oil to make it creamy. It does not have to be very creamy, because the mushroom mixture will contain enough sauce.
  • Spoon the kale into a bowl. And scoop the mushroom mixture nicely on top.
