Moroccan braised spicy celeriac

Celery is such a nice and healthy vegetable, and this is a fantastic way of preparing it. Moroccans are the best in coming up with amazing vegetable stews. Like this one. With tomatoes and a fatal combination of spices. The green olives are the smashers too.

Ingredients

  • 1 bunch celeriac

  • 4 ripe tomatoes

  • 4 cloves garlic

  • 1 table spoon turmeric and ginger

  • 2 table spoons paprika powder

  • 50 ml olive oil

  • pepper and salt

  • 20 green olives

  • 0,5 bouquet fresh coriander

preparation

  • Rinse the celeriac and cut them in slices.
    Cut the tomatoes in small dices.
    Cut the garlic in small pieces.
  • Preheat a pan and pour the olive oil in it. Add the celeriac and fry it together with the garlic. When the celeriac is fried a bit, after some 5 minutes, then add the tomatoes and the spices.
  • Let it all simmer gently for 20 minutes, let the sauce thicken and all the flavours work together. Add the green olives.
  • Cut the coriander leaves and add them in the pan with the vegetables. And then it’s time to serve.
