A spaghetti sauce with just onions, well mainly onions. Boring? Not tasteful? Well, think again. This is a velvet like super delicious sauce that stays with you for a while. En you cannot stop eating. Really, give it a try.

Ingredients

  • 500 gram mixed onions: red onions, white onions, shallots

  • 100 gram plant based butter

  • 2 dl vegan cream

  • pinch nutmeg

  • salt and pepper

  • 0,5 bouquet parsley

Directions

  • Cut the onions in small pieces. In the meantime preheat a thick bottomed pan. Let the butter melt and heat it. Then add the onions. Let them fry, gently, they should not turn brown. It is a delicate procedure that needs your attention. They should simmer in the butter, fry, but not get fried. This takes about 10 minutes.
  • Add 4-5 table spoons of hot water, add the lid and let it simmer for 20 minutes. In the meantime cook the pasta according to the instructions of the package.
  • Put the sauce in the blender and make a nice creamy sauce this way. Pour it back in the pan. Add the cream, the nutmeg and the parsley leaves.
  • Mix the sauce with the pasta and enjoy.
