Fresh peas, homemade pesto and pasta rice are an awesome combination for lunch or accompanying a soup for instance. It’s quite a hearty salad with a refined taste. Now peas are not so boring any more. Quite nice for them, right?

Ingredients

  • 1 kg fresh peas

  • 1 plant fresh basil

  • 50 gram pine nuts

  • 50 gram almonds

  • 75 ml olive oil

  • salt and pepper

  • 1 red onion

  • 3 spring onions

  • 2 cloves garlic

  • 100 gram Riso (pasta but in the shape of rice)

Preparation

  • Release the peas from their pods/shell.
  • Put the leaves of the basil, the pine nuts, the almonds, the olive oil, the garlic, salt en pepper in a blender or food processor and turn it into a great homemade pesto.
  • Cook the peas together with the pasta until they both are done.
  • Cut the red onion and the spring onions in slices.
  • Drain the peas and the pasta and fill up a salad bowl. Add the pesto and the onion. Mix everything well together and you are ready to go.
