Potato puree is the real comfort food, provided it is well made. Creamy, soft, velvety. This one has some spring onions and parsley as nice addition to it. Lovely with almost any vegetable side dish. Especially with the wild spinach and raisins one.

Ingredients

  • 1 kilo potatoes

  • 1 bouquet parsley

  • 3 spring onions

  • 50 ml olive oil

  • salt and pepper

Preparation

  • Peel the potatoes and boil them till done.
    Cut the spring onions in slices.
    Cut the parsley leaves.
  • Drain the potatoes, but let some water stay in the pan.
    Mash the potatoes.
    Add the olive oil and add as much as needed to make it a creamy texture.
  • Add the spring onions, the parsley and salt and pepper.
