Ingredients
500 gram cauliflower florets
100 gram pine nuts
100 gram yellow sultana raisins
1 shallot
1 lemon
salt and pepper
3 table spoons dried mint
Preparation
- Grind the cauliflower briefly with the pulse button in a food processor. Soak the raisins in some hot water for about 10 minutes. Heat some olive oil in a frying pan and fry the cauliflower in it for about 5 minutes. In another frying pan, gently toast the pine nuts until they release their scent. Squeeze the lemon. Finely chop the shallot.
- When the cauliflower is sufficiently fried, scoop it into a bowl. Drain the raisins and mix everything together.
