Short baked cauliflower with raisins, pine nuts and dried mint

This is your new favorite dish. Briefly fry the cauliflower florets in the olive oil. Raisins, pine nuts, dried mint, salt and some lemon juice. And you have such a surprisingly light and delicious dish. Cauliflower at its best.

Ingredients

  • 500 gram cauliflower florets

  • 100 gram pine nuts

  • 100 gram yellow sultana raisins

  • 1 shallot

  • 1 lemon

  • salt and pepper

  • 3 table spoons dried mint

Preparation

  • Grind the cauliflower briefly with the pulse button in a food processor. Soak the raisins in some hot water for about 10 minutes. Heat some olive oil in a frying pan and fry the cauliflower in it for about 5 minutes. In another frying pan, gently toast the pine nuts until they release their scent. Squeeze the lemon. Finely chop the shallot.
  • When the cauliflower is sufficiently fried, scoop it into a bowl. Drain the raisins and mix everything together.
