A nice quick pasta that everybody simply loves. Sometimes the chef is applauded for the most simple dishes. Well, this one is the one. On a weekday you will score high points on this one.

Ingredients

  • 1 package spaghetti

  • 150 gram white almonds

  • 2 cloves garlic

  • 50 ml olive oil

  • 150 gram vegan parmesan cheese

  • salt and pepper

  • 1 bouquet fresh basil and fresh parsley

  • 400 gram very ripe cherry tomatoes

preparation

  • Prepare a pesto with the almonds, basil, parsley, garlic, Parmesan cheese and olive oil in a food processor. Add the salt and pepper to your tasting. Do not make the pesto to creamy, it should keep some bite and crispiness to it.
  • Cook the spaghetti according to the instructions on the package. Drain and mix immediately with as much pesto as you like.
  • Cut the cherry tomatoes in four and add them to your pasta.
