Spicy carrot dip

On a table full of mezze this carrot dip is a great soft, sweet en spicy dish. The harissa is the miracle ingredient here. Also great to accompany some drinks in the late afternoon.

Ingredients

  • 250 gram carrots

  • 1-2 table spoons harissa

  • 3 cloves garlic

  • 1 table spoon paprika powder and groundcumin

  • some flat parsley and mint leaves

  • 1 lemon

  • 1 olive oil

  • pistachio nuts

  • salt and pepper

preparation

  • Cook the carrots nice soft. Then mash them with a fork together with the grated garlic, harissa, lemon, parsley, salt and pepper. Taste if it needs some more of one or the other ingredient.
  • Roast the nuts in a dry frying pan.
  • Pour the puree in a nice little plate, decorate with the paprika powder, the cumin, the pistachio nuts and some mint leaves/parsley.
