Ingredients

  • 6 very ripe tomatoes

  • 1 red onion

  • 20 leaves fresh mint

  • 1 lemon for the zest and the juice

  • really nice olive oil

  • salt and pepper

preparation

  • Cut the tomatoes and the red onion into small/tiny pieces.
  • Rinse the lemon and scrape off the zest.
  • Cut mint leaves.
  • Mix the olive oil, the lemon juice, the mint, the zest, salt and pepper together in a bowl. Mix it with the tomatoes and the onion.
  • Serve in 1 person portions on a little plate. Add some nice bread to dip in the sauce.
